White Bean Chicken Chili
I've been using these white beans a lot b/c they are in my food storage
soak them overnight
fry a chopped onion & celery with scotchbonnet peppers ( or whatever)
add water, diced yellow potato, beans and chicken
i use the Costco frozen breasts, thawed in the microwave and cut small with shears
to that add a jar of cheap salsa (target's is decent),
some tomato sauce or paste
a little date syrup or brown sugar
cayanne, ground ginger, white pepper, plenty of salt etc
add frozen corn near the end for color

Root Soup with Beer & Saffron
cut up carrots, parsnips (my love) & turnips however you like
also onion and a ton of ginger root ( cadbury egg size)
fry all this until softened
add water, beer ( i used bud light-thanks Alex) & a handful of saffron flowers( cheap at the Indian market. I go to the one on 9th E 4th South NE corner... by the Bagelry in an old 7-11.
lets see
i think i used some powdered yellow mustard and coriander
it's tasty as is, or dump in the blender 7 puree
or even better, do half & half so you can see the gorgeous veggies

this one i stole from Maren
but people keep asking for it
Baked Brie
slice open a whole wheel of Brie ( from Costco) horizontally so you have 2 pancakes
pile a bunch of pecans & brown sugar inside ( i use the Splenda 1/2 blend)
put it back together & back in the box
bake at 350ish for 40ish minutes
meanwhile saute sliced onions in oil & more brown sugar
after you take out the Brie, unwrap the top of the box & leave the bottom so it holds it's shape
pour the onions over the top
holy yum
